Eat: Avocado Toast 3 Ways
Avocado toast may seem like a really fancy breakfast item. The coffee shops around here like to charge $7-9 for it, which is ridic. In my world avo toast is my go-to hangover cure. It requires almost no effort or brainpower, it’s basically impossible to mess up and tastes good with pretty much anything stacked on top of it. Here are three of my fave ways to make avocado toast.
So Basic
Sometimes it’s ok to just be the most basic. This is particularly true when it comes to making avocado toast. Literally my favorite way to prepare it is the most simple.
- 1/2 mashed avocado
- toasted bread (I’m very into seedy bread, this is the multi-grain bread from Trader Joe’s)
- olive oil
- salt and pepper
Drizzle toasted bread with olive oil, top with mashed avocado, season with salt and pepper. Stuff it in your mouth. So damn delicious. You’re welcome.
Prosciutt-Oh So Delicious
If you need something with a little more substance add some protein to the toast. I like eggs and prosciutto because frying an egg is also really easy and I think that prosciutto makes me seem kind of fancy.
- 1/2 mashed avocado
- toasted bread
- olive oil
- salt and pepper
- 1 slice prosciutto
- 1 sunny side up egg (or however you like them)
Cook egg to your liking, drizzle toasted bread with olive oil, top with mashed avocado, season with salt and pepper. Crisp the prosciutto in the pan after your egg is done cooking then add it to the toast top it with your egg. I also enjoy this particular variety topped with Trader Joe’s Chili Onion Crunch.
Smoked Salmon
If you feel like showing off for whoever stayed over last night (*WINK) this flavor combo is super impressive and will make you seem like a really great chef when lets’ be real, it’s still just toast.
- 1/2 mashed avocado
- toasted bread
- olive oil
- salt and pepper
- smoked salmon
- capers
- fresh dill weed (or dried, I won’t judge you)
- lemon twist
Drizzle toasted bread with olive oil, top with mashed avocado, season with salt and pepper. Layer on some smoked salmon, add capers and top with fresh dill. Squeeze a little lemon on top and finish with a little lemon twist.
